Chickpeas flavored with dates, almonds, cinnamon, and turmeric
Ingredients
- 40g flaked Almonds, toasted
- 400g tin plum tomatoes
- 2 tbsp olive oil
- 1 tsp of ground coriander
- 1 tsp of ground turmeric
- 1 tsp cumin ground
- 660g jar large chickpeas
Method
- Blend dates and tomatoes to create a puree.
- Add the puree to the pot along with the ginger, garlic and lemon zest.
- Add the remaining chickpeas and dates, and stir for another 30 minutes. Serve with chopped coriander and toasted almonds.
