Slow-Cooker Chorizo Paella & Shrimp
The Spanish dish Shrimp and Paella Chorizo is one of the most popular dishes in Spain. It is delicious and has heart-healthy benefits.
Ingredients
- 6 ounces Spanish Chorizo
- Yellow onion, 1 1/2 cups
- Brown rice, 1 1/2 cups
- Red bell pepper, 1 cup, chopped
- 2 cups unsalted chicken stock
- Raw shrimp – 1 1/2 lbs
- Half a teaspoon of ground turmeric
- Fire-roasted tomatos in a can
- Sweet peas, 1 1/2 cups
Method
- In a nonstick skillet, add the chorizo and cook it until it is brown. Add the bell peppers and onions to the skillet and cook until they are softened.
- Add the rice and garlic, and toast for one minute. Add the chorizo, turmeric, tomatoes, stock and salt. Cook on high heat for 3 hours, covered.
- Add the peas and shrimp, and cook again for 15 minutes. Serve with parsley on top.
