Turmeric Rice Bowl with Chickpeas & Vegetables

This plant-based meal boosts immunity and metabolism with its fragrant turmeric rice bowl topped with chickpeas, roasted root vegetables and chickpeas.

Ingredients

Here is a list of ingredients that you will need.

  • 1 1/4 cups of water
  • 1/2 cup brown basmati rice
  • Extra virgin olive oil, 1 teaspoon
  • 1 teaspoon freshly grated or 1/2 teaspoon ground turmeric
  • Use 1 teaspoon of onion or garlic powder
  • One can of rinsed and wiped dry chickpeas
  • 1 cup roasted root vegetables

Method

  • Bring water, turmeric powder, salt and pepper to a boil, then add olive oil. Cover the rice with a lid and continue to cook until the liquid is completely absorbed.
  • In the meantime, heat the oil in another skillet and roast the root vegetables and chickpeas. Serve with the rice.
