Turmeric Rice Bowl with Chickpeas & Vegetables

Ingredients
Here is a list of ingredients that you will need.
- 1 1/4 cups of water
- 1/2 cup brown basmati rice
- Extra virgin olive oil, 1 teaspoon
- 1 teaspoon freshly grated or 1/2 teaspoon ground turmeric
- Use 1 teaspoon of onion or garlic powder
- One can of rinsed and wiped dry chickpeas
- 1 cup roasted root vegetables
Method
- Bring water, turmeric powder, salt and pepper to a boil, then add olive oil. Cover the rice with a lid and continue to cook until the liquid is completely absorbed.
- In the meantime, heat the oil in another skillet and roast the root vegetables and chickpeas. Serve with the rice.
