Turmeric-roasted cauliflower

You can make a healthy and crispy snack by roasting cauliflowers in a little turmeric with other spices. Roasting cauliflowers makes them a healthy side dish with a crunchy outside and softer inside. Cauliflower acts as a sponge to absorb any marinade or spice mix, such as turmeric, cumin and garlic. You can also add the turmeric-roasted florets to grain or salad bowls for a healthier plant-based meal without having to do any extra cooking.

Ingredients

Here is a list of ingredients that you will need.

  • Ground turmeric, 1 1/2 teaspoons
  • Extra virgin olive oil 3 tablespoons
  • Cumin ground to 1/2 teaspoon
  • 2 large cloves garlic, minced
  • Half a teaspoon of salt
  • 8 cups cauliflower florets (About 2 pounds; 1 large head)
  • Lemon juice – 1-2 teaspoons

Method

  • Pre-heat the oven to 425 degrees F.
  • In a large bowl, whisk together the turmeric, garlic, cumin, oil, and salt. Add the cauliflower to a large bowl and mix it well. Transfer the cauliflower coated with oil to a large baking sheet rimmed with aluminum foil. Roast the cauliflower for 15 to 20 mins, stirring only once. You can drizzle lemon juice on top of the roasted cauliflower for an added flavor.
