Latex sensitivity is uncommon, but it affects approximately 9 percent of health care personnel. Through latex mittens and balloons, sensitive individuals are exposed. Some foods, such as nuts and fruits, can also provoke anaphylaxis caused by latex. Workers in the rubber industry, food handlers, and others face greater occupational dangers.
